Course introduction


You can obtain the knowledge, skills and behaviours you need to work as a senior production chef thanks to this apprenticeship.

Senior production chefs strive to produce customers’ meals to perfection according to predetermined specifications.

Production chefs are likely to work in organisations where brands, recipes and menus have been created by a central development team.

They work quickly and efficiently, producing food in high volumes, which is repeated day after day, requiring energy, organisational skills and attention to detail.

This opportunity is suitable for people who have been offered employment, or are already working within, hospitals, contract catering firms, military bases, and function sections of large hotels or care homes.

At Brockenhurst College you will be supported by our dedicated team of chef assessors. All these people have many years of experience in the role of a chef, as well as national, international and military-based experience in culinary excellence.

Teaching & learning


Teaching will be delivered on a one-to-one basis for at least one hour at each meeting. The information will be logged in a format that can be retrieved for later use either manually or electronically.

Your college assessor will be a key source of support throughout the programme. If you are falling short, then together you will develop a one-to-one programme of upskilling in practical tasks, behaviours and knowledge.

Minimum entry requirements


  • GCSE Maths and English at grade 4 or above.
  • Functional Skills Maths and English will be included in your programme if you have not achieved at least GCSE grade 4. 
  • Experience in a supervisory role is desirable. 
  • You must be employed for a minimum of 30 hours per week.

Course structure


Your assessor will visit you in your workplace every two to three weeks to support you in gathering evidence to map into your portfolio/eportfolio.

Twenty-per-cent of your training will be off-the-job training, which typically includes external visits, work shadowing and research.

You will also benefit from quarterly reviews and pre-planned micro assessments to work towards the programme criteria and plan for the End Point Assessment required by the awarding body.

You will study the following areas:

  • Culinary skills, including food preparation and cooking.
  • Food safety, including handling, preparing and storing food safely.
  • Health and safety, including how to work safely and with others.
  • People skills, including communication and listening.
  • Business skills, including basic food costing, ordering and stock control techniques.

What can I do with this qualification?


If you successfully achieve this qualification in production cooking, you will be ready to progress onto a higher-level position or further training.
