Joe takes rustic career route by accepting Head Chef job at Chalk Valley Farm & Kitchen restaurant

Enthusiastic chef and former Brock Student Joe Hibberd has been named Head Chef at barbecue eatery Chalk Valley Farm & Kitchen restaurant in Southampton.

Joe’s new post is the ideal opportunity for him to share his passion for rustic cooking over fire, having already held some high-profile catering jobs.

After completing his Level 3 vocational course in Professional Catering at Brock, Joe spent five years developing his skills at nearby Careys Manor Hotel as a chef de partie.

He then took his talents to five-star Lainston House near Winchester, before switching away from fine-dining to work at the newly reopened Chalk Valley Farm & Kitchen restaurant on London Road.

Joe said: “At Chalk Valley we have our own cows and pigs that we farm in order to serve in our restaurant.

“The idea of coming here was to help me learn more about using animals in the best way I can – from nose to tail, so nothing is wasted.”
